On May 23, join an immersive experience of our culinary heritage and discover dishes from Southern Tagalog, Pampanga, Zamboanga, and Cordillera.
This event celebrates heirloom food preservation techniques from diverse regions, featuring unique dishes encapsulating centuries of culinary tradition.
One such dish is “Pinais na Sugpo,” from Southern Tagalog. It involves wrapping fresh prawns and young coconut in pechay and banana leaves and slowly cooking them in coconut water and creamy coconut cream to seal in flavors.
Another is Zamboanga’s “Bacalao in Saffron Ravioli,” a fusion of Spanish and Filipino influences encased in homemade pasta. “Sinigang Pork Etag Burrito” is a unique twist on a Filipino classic featuring smoky pork belly and Ifugao mountain rice wrapped in warm flatbread.
Experience Pampanga’s culinary legacy with “Pindang Damulag” – tender beef marinated in local flavors, served with moringa nachos and Davao’s chevre-style cheese. End the meal with “Halo-Halo de lloco” – a sweet tropical delight made with carabao milk, Bacnotan honey, cassava, saba banana, ube kamoteng kahoy, and young coconut.
Partnered by Limtuaco Distillery, handcrafted cocktails featuring indigenous spirits like Lambanog and Basi, creatively blended with local fruits and herbs, will accompany the evening.
